Creamy bacon soup

All I can say is that with this soup a nice and nutritious (and also pretty heavy, as you can see from the picture) dinner is guaranteed. It is very easy to make:Koorene peekonisupp

75 g bacon slices
1 onion
1-2 potatoes
2 carrots
a few tbsp peas
200 ml cream
250 ml chicken broth
salt, pepper, parsley

 

# Chop bacon, onion, potato(es) and carrots.

# Fry bacon in a saucepan for 2-3 minutes, add chopped onion and continue frying for another 3-5 minutes.

# Pour broth into the saucepan, also add potatoes and carrots. You can actually add chopped celery as well, if you like.

# Boil soup for about 15 minutes until vegetables are more or less done, then add cream together with peas and turn the heat down. Season with salt, pepper and parsley and continue simmering until vegetables are ready.

Nice and simple. You can make it a bit less heavy when frying bacon separately and draining it before adding to the soup with peas and cream.
