After discovering a lot of vegetables from my fridge, I decided to improvise a juicy rice dish. Turned out to be pretty good and was very easy to make. For two persons you will need:
# Chop bacon, onion, carrot, bell pepper and zucchini.
# Fry bacon until tender (not crisp), remove from pan and drain.
# Place bacon slices into a saucepan, add sliced onion, carrot and bell pepper and simmer for 7-10 minutes. Add rice and continue to simmer until rice turns golden.
# Pour half of the broth into the saucepan and add sliced zucchini, pepper and soy sauce. Stir constantly, so that the rice would not burn. If the dish seems dry, add more broth.
# Cut tomatoes into sectors, add the saucepan and simmer it for another 15 minutes, or until the rice is soft. Then place the dish to a hot plate and enjoy!
This dish is very colorful and since there is more vegetables than there is meat, I think it might be pretty healthy as well. At least that’s what I kept telling myself after the second portion…
